Homemade hummus

Hummus is one of the zesty, delicious, heart-warming mezzes which you can make
in minutes! Homemade food is always a winner if you want to reduce carbon
footprint of your kitchen due to reduced food processing, packaging and
transportation. Sky is the limit when it comes to making your food sustainable and
here are some tips; eat local, eat homemade, buy non-plastic!

Ingredients

2 cloves of (organic) garlic
1 lemon juice
2 tbsp tahini
200 grams cooked chickpeas
1 tsp bicarbonate of soda
½ tsp salt
1 tbsp olive oil
1-2 tbsp cold water 

Recipe

Crush garlic and soak in lemon juice for 10-15 minutes. Soaking will take away the
bitterness of garlic. Put garlic, lemon juice and tahini in your food processor and mix thoroughly for a a minute. This step is where the creaminess of you hummus start. Yum! Add rest of the ingredients in the mix and give them a good whizz up until you are happy with the texture. Enjoy!

PS: No food processor? How about making it even more sustainable by using mortar
and pestle to crush your ingredients. Your hummus will have a unique texture this
way too.
